They are a fall tradition for both adults and kids of all ages.

Candy apples on a stick.

"Caramel apples are traditionally associated with the fall harvest of apples," said Stuart Sorkin, CEO of Affy Tapple, "So for years when the fresh apples were picked, one of the treats that would be made would be caramel apples."

Legend has it that Sorkin`s company created the first caramel apples in the United States way back in the 1940`s.

"We`re certainly the ones that started it in its popularity," said Sorkin.

Every day freshly picked apples get dumped in here at the start 3,000 at a time. They`re sorted for size and the sticks are still inserted by hand into each and every one.

"One of the most important things about putting a stick in an apple," said Sorkin, "Is actually getting it through the middle of the core."

That way they stay fresher longer. Then the moment comes when each apple descends into the gooey confection that gives the “Affy Tapple” its name.

Caramel is still made from the original 1948 recipe, which is cooked in these giant copper pots just a few feet away, then used the second it`s done.

"If you hold it too long you won`t get that special flavor," said Sorkin, "So timing is pretty critical to the process."

Then some of the apples get rolled in nuts and all are sent on their way, packed in containers and actually passed through a metal detector to check for any impurities.

"Every apple that we make is shipped out of our plants within 24 hours," said Sorkin. "If you go into a local grocer, that apple was probably made here in our plant no more than 2 or 3 days ago."

Back in the 90`s Affy Tapple added a high-end cousin, Mrs. Prindables.

Every one of these masterpieces is hand-made by talented people who pretty much proved to us why we aren`t in the apple business.

That store by the way, right here at the factory, now constitutes about ten percent of Affy Tapple`s business.

And the business appears to be doing very well.

"We`ll make up to 300,000 apples in any given day," said Sorkin. "In the course of a year, we`ll do over ten million apples for Affy Tapple."

So now you know.

The name "Affy Tapple" was created in the forties. The folks at Affy
Tapple figured out that by switching the letters, they could move to the A`s in the yellow pages.
